The easiest vegan mayonnaise ever

Hi,

Here is one of my favourite dressing recipes : a vegan mayonnaise, a great alternative to this traditional French dressing for those who can’t or don’t want to eat eggs. To tell you the truth, I’ve been preparing this vegan mayo a dozen times over the last  two months and I can’t get enough of it, it’s simply delicious. 

This vegan mayo is light, creamy while firm and very tasty. Thanks to the soy cream, you’ll get a very similar texture to the traditional mayonnaise and the best point is that… while being fat-free and egg-free, it’s extremely easy to make ! You cannot make a mess of this mayo which is a powerful argument since unable to prepare a mayonnaise by myself (without my father behind me to  take the lead and remedy the disaster…).

Preparation time : 5 to 10 minutes

Kitchen tools:

  • a hand blender (it works with a simple whisk but will take more time and energy).

Ingredients: 

  • 10 cl soy cream
  • 5 teaspoons rape oil (it works with any other oil but rape oil has a neutral taste and gives a nice color to the mayo)
  • juice of half a lemon
  • 1 small piece of garlic (if you like it).
  • 1 teaspoon coarse-grain mustard

Preparation:

  1. Pour soy cream in a high container (if you use a hand blender) and add rape oil. Blend for a few seconds.
  2. Add garlic, mustard, lemon juice and blend a second time (lemon+mustard will enable the sauce to be emulsified).
  3. Keep in the fridge for a while before serving.

You’ll get a creamy and firm mayonnaise with a nice garlic taste ! You can keep it in the fridge for three days. Bon appétit !
